Cooking with a traditional wok can be frustrating, as the large size often means the sides don’t get as hot as the bottom, leading to slower, uneven cooking. Jean-Patrique has solved this problem with an innovative double-wok design: two stainless steel woks are pressed together with a 2mm layer of aluminium sandwiched between them. This pressurised aluminium is 25 times more heat conductive than stainless steel, transferring heat quickly and evenly from the bottom up the sides to the rim.
